We have always used the quick-cooking type that you buy at the grocery store, and only half of my family eats them. The bag states it takes about 25 mins to cook, but I don't agree. Within 15 mins or less, it's ready. I use a 4-1 ratio of liquid to polenta. So one cup of polenta for 2 of us (with a little bit leftover), works. I use 2 cups of broth and 2 cups of milk, bring to a boil, add polenta, lower heat to simmer and stir often, not continuously, not necessary. At end, shut off heat and add parmesan cheese to taste and a few dabs of butter, whisk in, like ending a risotto. Yummy. A different alternative to mashed potatoes and rice. You can even stuff peppers with it or scoop some chili over it. It's great for braised meats w/gravy, layer that on top. Comfort food at its best. I like the mouth feel, it is not like baby food, it has some texture and creaminess combined. |
